1If using dried chickpeas , rinse the soaked beans and place them in a pot . Cover with water , add the whole peeled medium potato , and cook until tender (about ⏱️ 1 hour ). 2In a separate thick-bottomed pan , warm the olive oil and butter . Add the sliced medium leeks and sliced garlic cloves with a good pinch of salt . 3Drain the cooked chickpeas and potato. Add them to the pan with the leeks and cook for ⏱️ 1 minute to combine the flavors.

4Add about two-thirds of the chicken or vegetable stock to the pan. Bring to a simmer and let it cook for about ⏱️ 15 minutes .chicken or vegetable stock: 3 c

5Puree exactly half of the mixture in a food processor or with an immersion blender , leaving the other half chunky.
